Lettuce Taco Cups (GF, DF)

1lb organic ground turkey (or other ground meat)

1 packet Siete taco seasoning

Bell peppers

Mushrooms

Cilantro

Sea Salt

Butter lettuce leaves

Pico de gallo

Avocado


  1. Heat a medium-sized skillet with oil (I use avocado or olive) and cook your preferred taco meat until browned. Follow the instructions on the taco seasoning packet - add 1/3 cup water and the whole pack of seasoning. Mix into the cooked taco meat and simmer for 2-3 minutes.

  2. Add diced bell pepper, mushrooms, cilantro, and cook until soft.

  3. Separate your desired amount of butter leaves. Rinse with water to ensure they’re clean. Place on your plate and scoop the taco and vegetable mixture into each leaf.

  4. Add your toppings of pico de gallo, diced avocado (or guac), and whatever else you want to include!

  5. Store leftover taco mixture in an air-tight container and enjoy for leftovers the next day.
